#101pastas 025: Aglio e olio

Pasta simplicity.

We think this works best with a long pasta such as spaghetti, but we’re not going to dictate here. We’ll leave that up to your fellow panic shoppers at the local supermarket all those months ago.

Serves 1
Olive oil
Garlic 1 fat clove
Chilli flakes to taste
Parmesan to finish

Optional extras
Flat leaf parsley 1/2 a handful
Rocket 1/2 a handful
Fried breadcrumbs (from @herdgastronomy’s #101pastas 024) a handful

Cook your pasta.

Chop your garlic and fry with your chilli on a low heat so it releases its flavour. Do not cook it beyond golden as it will turn bitter. If using, roughly chop your parsley and rocket and throw in.

Drain your pasta and toss with the oil immediately, using a little cooking water to loosen if necessary.

Finish with breadcrumbs, parmesan and freshly ground black pepper.
