Very kindly donated by our friend and fantastic chef, Michael Chan, this is a simple pasta dough recipe using the excellent Duchess Farm‘s heritage wholegrain flour.
Serves 2 (multiply as required)
Duchess Farm heritage wholegrain flour 65g
Tipo 00 flour 60g
Salt 2 pinches
Caster sugar 1 pinch
Eggs 2 medium, preferably good quality
Place the flours, sugar and salt into a bowl and use a whisk to combine. Make a well in the centre of the flours. Crack the eggs into the well. Using a fork, slightly whisk the eggs, incorporating the flour into the eggs working from the middle outwards, until it starts to come together.
Using your hands, form into a dough ball, adding water if too dry. Put the dough onto a clean bench and knead for at least 10 minutes. The dough should be fairly firm and have some elasticity to it.
Make into a flat ball, cover and refrigerate.

To cook, add to salted, boiling water. Cook for 2 minutes and then strain.
